Ingredients:
- 2 large sweet potatoes, diced
- 1 red bell pepper, diced
- 1 small red onion, diced
- 2 tbsp Lemon Olive Oil
- 1 tbsp Peach Balsamic
- Salt, pepper, and smoked paprika to taste
Instructions:
- Preheat oven to 425°F.
- Toss all veggies with Lemon Olive Oil, Peach Balsamic, salt, pepper, and paprika.
- Roast for 25–30 minutes until tender and caramelized.
