Sweet Potato & Peach Balsamic Hash

Ingredients:

  • 2 large sweet potatoes, diced
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 tbsp Lemon Olive Oil
  • 1 tbsp Peach Balsamic
  • Salt, pepper, and smoked paprika to taste

Instructions:

  1. Preheat oven to 425°F.
  2. Toss all veggies with Lemon Olive Oil, Peach Balsamic, salt, pepper, and paprika.
  3. Roast for 25–30 minutes until tender and caramelized.
