Ingredients:
- 2 lbs baby potatoes, halved
- 2 tbsp J. Olive Co. Rosemary Olive Oil
- 2 tbsp J. Olive Co. Wild Blueberry Balsamic
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp fresh thyme (optional)
Instructions:
- Preheat oven to 400°F.
- In a bowl, toss potatoes with Rosemary Olive Oil, salt, pepper, and garlic.
- Spread evenly on a baking sheet and roast for 25–30 minutes, flipping halfway.
- Drizzle with Wild Blueberry Balsamic and toss to coat. Roast for an additional 5 minutes.
- Garnish with fresh thyme and serve warm.
