Rosemary & Blueberry Balsamic Roasted Potatoes

Ingredients:

  • 2 lbs baby potatoes, halved
  • 2 tbsp J. Olive Co. Rosemary Olive Oil
  • 2 tbsp J. Olive Co. Wild Blueberry Balsamic
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp fresh thyme (optional)

Instructions:

  1. Preheat oven to 400°F.
  2. In a bowl, toss potatoes with Rosemary Olive Oil, salt, pepper, and garlic.
  3. Spread evenly on a baking sheet and roast for 25–30 minutes, flipping halfway.
  4. Drizzle with Wild Blueberry Balsamic and toss to coat. Roast for an additional 5 minutes.
  5. Garnish with fresh thyme and serve warm.
