Ingredients:
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp J. Olive Co. Butter Olive Oil
- Salt and black pepper to taste
- 2 tbsp J. Olive Co. Dark Chocolate Balsamic
- Optional: chopped fresh rosemary or thyme
Instructions:
- Preheat oven to 400°F. Toss sweet potato cubes with Butter Olive Oil, salt, pepper, and optional herbs.
- Spread on a baking sheet and roast for 30–35 minutes, flipping halfway, until tender and caramelized.
- Meanwhile, in a small saucepan, simmer Dark Chocolate Balsamic over low heat until reduced by half (about 5 minutes).
- Drizzle reduction over roasted sweet potatoes before serving.
