Roasted Sweet Potatoes with Butter Olive Oil and Chocolate Balsamic Reduction

Ingredients:

  • 2 large sweet potatoes, peeled and cubed
  • 2 tbsp J. Olive Co. Butter Olive Oil
  • Salt and black pepper to taste
  • 2 tbsp J. Olive Co. Dark Chocolate Balsamic
  • Optional: chopped fresh rosemary or thyme

Instructions:

  1. Preheat oven to 400°F. Toss sweet potato cubes with Butter Olive Oil, salt, pepper, and optional herbs.
  2. Spread on a baking sheet and roast for 30–35 minutes, flipping halfway, until tender and caramelized.
  3. Meanwhile, in a small saucepan, simmer Dark Chocolate Balsamic over low heat until reduced by half (about 5 minutes).
  4. Drizzle reduction over roasted sweet potatoes before serving.
