Maple Balsamic Roasted Carrots

Ingredients
  • 2 lbs carrots peeled and sliced in half (if any carrots are very large, you may wish to cut them into quarters)
  • 3 Tbsp. J. Olive Co. Maple Balsamic
  • 1 Tbsp. J. Olive Co. Butter Olive OIl 
  • 3 Tbsp. maple syrup
  • salt and pepper

Instructions

  1. Preheat oven to 400F and line a baking sheet with parchment paper.
  2. Peel and slice your carrots to the desired size. I like to slice them in half (or quarters if they are especially large).
  3. Mix the balsamic vinegar, maple syrup and olive oil in a bowl to create the glaze.
  4. Toss the carrots in the glaze. Reserve the rest of the glaze to brush on halfway through the cooking process.
  5. Arrange the carrots on the baking sheet and season with salt and pepper. Roast in the oven for 15 minutes. Take out and brush with the glaze and then return to the oven to roast for another 15 minutes or until the carrots are fork tender. [If your carrots are large, they will likely need longer to cook]
