Ingredients
- 1lb fresh green beans
- 1-2 green onions, sliced
- 2 cloves of garlic, minced
- 2 Tbsp. J. Olive Co. Fig Balsamic
- 6 Tbsp. J. Olive Co. Garlic Olive Oil
- 6 dried figs, sliced
- 3⁄4 cup slivered almonds, toasted
- Salt and pepper to taste
Instructions
- Bring a large pot full of water to a rolling boil. Drop beans into the pot and cover for 3-5 minutes or until slightly tender. Remove beans from hot water and place in a bowl of ice water to stop the cooking. Once cool, drain beans in colander.
- In a large bowl, combine green onion, garlic, olive oil, and balsamic vinegar.
- Cut cool, dried beans into ½ inch lengths and toss with dressing and figs.
- Cover and chill for 30 minutes to 60 minutes.
- Serve and top generously with toasted almonds.
