Garlic and Fig Green Bean Salad

Ingredients

  • 1lb fresh green beans
  • 1-2 green onions, sliced
  • 2 cloves of garlic, minced
  • 2 Tbsp. J. Olive Co. Fig Balsamic
  • 6 Tbsp. J. Olive Co. Garlic Olive Oil
  • 6 dried figs, sliced
  • 34 cup slivered almonds, toasted
  • Salt and pepper to taste

Instructions

  1. Bring a large pot full of water to a rolling boil. Drop beans into the pot and cover for 3-5 minutes or until slightly tender. Remove beans from hot water and place in a bowl of ice water to stop the cooking. Once cool, drain beans in colander.
  2. In a large bowl, combine green onion, garlic, olive oil, and balsamic vinegar.
  3. Cut cool, dried beans into ½ inch lengths and toss with dressing and figs.
  4. Cover and chill for 30 minutes to 60 minutes.
  5. Serve and top generously with toasted almonds.
