Spring Salad with Elderflower Lime Vinaigrette

Ingredients:

  • 4 cups mixed greens (arugula, spinach, or butter lettuce)
  • ½ cup sliced strawberries or segmented oranges
  • ¼ small red onion, thinly sliced
  • ⅓ cup crumbled goat cheese
  • ¼ cup toasted almonds, pecans, or walnuts

Dressing:

  • 3 tbsp J. Olive Co. Elderflower Balsamic
  • 2 tbsp J. Olive Co. Persian Lime Olive Oil
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Instructions:

  1. Whisk dressing ingredients in a small bowl.
  2. Toss salad ingredients in a large bowl.
  3. Drizzle with dressing and toss gently.
  4. Serve immediately.
