Spring Fruit Salad with Blood Orange-Pomegranate Dressing

Ingredients:

  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 cup kiwi, peeled and chopped
  • 1 cup mango, diced
  • 2 Tbsp J. Olive Co. Blood Orange Olive Oil
  • 2 Tbsp J. Olive Co. Pomegranate Quince Balsamic
  • 1 tsp fresh lime juice
  • Fresh mint leaves, for garnish

Instructions:

  1. In a large bowl, combine all the chopped fruits.
  2. In a small bowl, whisk together the olive oil, balsamic, and lime juice.
  3. Drizzle dressing over the fruit and gently toss to coat.
  4. Garnish with fresh mint and serve chilled.
