Ingredients:
- Mixed greens (arugula, baby spinach, spring mix)
- 1 ripe peach or nectarine, sliced
- 2 tbsp goat cheese or feta crumbles
- 1 tbsp chopped toasted almonds
- 1 tbsp J. Olive Apricot Balsamic
- 11⁄2 tbsp J. Olive Baklouti Olive Oil
- Salt & pepper, to taste
Instructions:
1. In a large bowl, layer greens, fruit, cheese, and almonds.
2. In a jar or small bowl, whisk Baklouti Olive Oil and Apricot Balsamic with a pinch of salt and pepper.
3. Drizzle over salad just before serving.
