Ingredients:
- 8 oz pasta (e.g., rotini or bow-tie), cooked and cooled
- 1 cucumber, thinly sliced
- 1 cup cherry tomatoes, halved
- ½ cup red onion, thinly sliced
- ¼ cup crumbled feta cheese
- 3 tbsp J. Olive Co. Garlic Olive Oil
- 2 tbsp J. Olive Co. Suyo Cucumber Balsamic
- 1 tsp Dijon mustard
- Salt and pepper to taste
- 1 tbsp fresh dill, chopped (optional)
Instructions:
- In a small bowl, whisk together the Garlic Olive Oil, Suyo Cucumber Balsamic, Dijon mustard, salt, and pepper.
- In a large bowl, combine the pasta, cucumber, cherry tomatoes, red onion, and feta.
- Pour the dressing over the salad and toss until evenly coated.
