Cucumber Pasta Salad

Ingredients:

  • 8 oz pasta (e.g., rotini or bow-tie), cooked and cooled
  • 1 cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, thinly sliced
  • ¼ cup crumbled feta cheese
  • 3 tbsp J. Olive Co. Garlic Olive Oil
  • 2 tbsp J. Olive Co. Suyo Cucumber Balsamic
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • 1 tbsp fresh dill, chopped (optional)

Instructions:

  1. In a small bowl, whisk together the Garlic Olive Oil, Suyo Cucumber Balsamic, Dijon mustard, salt, and pepper.
  2. In a large bowl, combine the pasta, cucumber, cherry tomatoes, red onion, and feta.
  3. Pour the dressing over the salad and toss until evenly coated.
  4. Garnish with fresh dill, if desired, and serve chilled.
