Christmas Salad with Herb-Grapefruit Vinaigrette


  • 6 cups mixed greens
  • 3 medium oranges, peeled and segmented
  • ½ cup chopped pecans, toasted
  • 6 tablespoons dried cranberries
  • 1 cup orange juice


  • 3 Tbsp. J. Olive Co. Herbs de Provence Olive Oil
  • 2 Tbsp. J. Olive Co. Grapefruit Balsamic
  • 3 Tbsp. orange juice
  • 1 Tbsp. grated orange zest
  • Other recommended garnishes (optional): beetroot, feta cheese, pomegranate seeds,


  1. In a small saucepan, bring orange juice to a simmer, remove from heat. Stir in the dried cranberries. Let stand until softened, about 30 minutes. Drain and discard the juice.
  2. In a small bowl, whisk the olive oil, balsamic vinegar, orange juice, and orange zest. Stir in soaked cranberries. Season with salt and pepper. Vinaigrette can be prepared one day ahead. Cover and refrigerate. Bring to room temp before serving.
  3. Place salad greens in a large bowl. Add oranges and toss with dressing. Arrange salad mixture on a round platter in the shape of a Christmas wreath. Sprinkle pecans on top and any other garnishes of your choice!
