Sesame Ginger Chicken Stir-Fry

Ingredients:

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tbsp J. Olive Co. Toasted Sesame Oil
  • 3 tbsp J. Olive Co. Honey Ginger Balsamic
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 2 garlic cloves, minced
  • 1 red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 tsp fresh ginger, grated
  • Cooked rice, for serving
  • Sesame seeds for garnish

Instructions:

  1. In a bowl, whisk together J. Olive Co. Honey Ginger Balsamic, soy sauce, honey, and minced garlic.
  2. Heat J. Olive Co. Toasted Sesame Oil in a large skillet or wok over medium-high heat. Add the sliced chicken and stir-fry for 5-6 minutes, until browned and cooked through.
  3. Remove the chicken from the skillet and set aside. In the same skillet, add the bell pepper, broccoli, carrot, and grated ginger. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Return the chicken to the skillet and pour the balsamic sauce mixture over the chicken and vegetables. Stir to coat evenly and heat through.
  5. Serve over cooked rice and garnish with sesame seeds.
