Ingredients
For the Chicken
- 4 boneless, skinless chicken breasts
- 2 tbsp J. Olive Extra Virgin Olive Oil
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- ½ tsp kosher salt
- ¼ tsp black pepper
For Topping
- 8 oz fresh mozzarella, sliced
- 2 medium tomatoes, sliced
- Fresh basil leaves
For Finishing
- 3 tbsp J. Olive Raspberry Balsamic
- 1 tbsp J. Olive Extra Virgin Olive Oil
Instructions
- Preheat grill or grill pan to medium-high heat.
- Brush chicken breasts with 2 tablespoons of J. Olive Extra Virgin Olive Oil. Season with garlic powder, Italian seasoning, salt, and pepper.
- Grill chicken for 5 to 7 minutes per side, or until the internal temperature reaches 165°F.
- During the last 2 minutes of cooking, top each chicken breast with slices of fresh mozzarella and allow the cheese to soften.
- Transfer chicken to a serving platter and top with sliced tomatoes and fresh basil leaves.
- In a small bowl, whisk together Raspberry Balsamic and 1 tablespoon Extra Virgin Olive Oil.
- Drizzle the balsamic mixture over the chicken just before serving.
