Raspberry Balsamic Chicken Caprese

Ingredients

For the Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tbsp J. Olive Extra Virgin Olive Oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp kosher salt
  • ¼ tsp black pepper

For Topping

  • 8 oz fresh mozzarella, sliced
  • 2 medium tomatoes, sliced
  • Fresh basil leaves

For Finishing

  • 3 tbsp J. Olive Raspberry Balsamic
  • 1 tbsp J. Olive Extra Virgin Olive Oil

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Brush chicken breasts with 2 tablespoons of J. Olive Extra Virgin Olive Oil. Season with garlic powder, Italian seasoning, salt, and pepper.
  3. Grill chicken for 5 to 7 minutes per side, or until the internal temperature reaches 165°F.
  4. During the last 2 minutes of cooking, top each chicken breast with slices of fresh mozzarella and allow the cheese to soften.
  5. Transfer chicken to a serving platter and top with sliced tomatoes and fresh basil leaves.
  6. In a small bowl, whisk together Raspberry Balsamic and 1 tablespoon Extra Virgin Olive Oil.
  7. Drizzle the balsamic mixture over the chicken just before serving.
