Lychee Lemon Grilled Shrimp Skewers

Ingredients

  • 1/2 cup J. Olive Co. Lemon Olive Oil
  • 3 Tbsp. Lychee Balsamic
  • 20 large fresh or frozen shrimp, peeled and deveined
  • 1 Tbsp. minced garlic
  • 1 tsp fennel seed
  • ¼ tsp chili pepper flakes
  • 1 tsp kosher salt
  • Fresh cracked black pepper to taste

Instructions

  1. Mix all ingredients except the shrimp in a bowl and whisk until completely blended.
  2. Place shrimp in resealable plastic bag, pour in marinade and gently massage the ingredients. Let marinate for 30 minutes up to one hour.
  3. Heat your grill to medium-low. Remove shrimp from the plastic bag and place on skewers one by one, crosswise. Place on grill and cook for two minutes. Flip the shrimp skewers and cook for one minute on the other side.
  4. Transfer to platter and drizzle with lemon olive oil and fresh cracked black pepper.
