Lemon Peach Balsamic Chicken


  • 4 boneless, skinless chicken breasts (you may also use chicken thighs)

  • 2 Tbsp. J. Olive Co. Lemon Olive Oil

  • ¼ c. J. Olive Co. Peach Balsamic

  • 1-2 tsp. kosher salt

  • 1-2 tsp. Freshly ground black pepper

  • 2 cloves garlic, minced

  • 1 shallot, chopped

  • 4 large peaches, sliced

  • 1/3 c. torn fresh basil


  1. In a large skillet over medium heat, heat olive oil.

  2. Season chicken with salt and pepper and cook until golden and no longer pink, around 8 minutes per side. Transfer to plate.

  3. Add garlic and shallot to skillet and cook 2 minutes. Add peaches and cook until softened, 5 minutes more. Pour in balsamic vinegar and simmer until slightly reduced (2 minutes), then stir in basil.

  4. Add chicken back to the pan to toss in balsamic peach reduction.
