Ingredients:
- 4 salmon fillets
- 3 tbsp Lemon Olive Oil
- Salt and pepper, to taste
- 1 garlic clove, minced
- 1 cup strawberries, diced
- 2 kiwis, diced
- 2 tbsp Strawberry Kiwi Balsamic
- Fresh basil or mint, chopped
- Optional: avocado slices for serving
Directions:

Preheat oven to 400°F or heat grill to medium-high heat.

Brush salmon fillets with Lemon Olive Oil and season with salt, pepper, and minced garlic.

Place salmon on a lined baking sheet or grill and cook for 12–15 minutes, or until salmon flakes easily with a fork.

While the salmon cooks, combine diced strawberries, kiwi, Strawberry Kiwi Balsamic, and fresh basil or mint in a bowl.

Stir well and let the salsa chill for 10 minutes to allow the flavors to blend.

Remove salmon from oven or grill and top each fillet with the strawberry kiwi salsa.

Serve immediately with avocado slices or your favorite summer side.
