Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tbsp J. Olive Co. Leek Olive Oil
- 3 tbsp J. Olive Co. Cascadian Wild Raspberry Balsamic
- 2 cloves garlic, minced
- 1 tbsp Dijon mustard
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions:
- Preheat oven to 375°F (190°C).
- In a small bowl, whisk together the J. Olive Co. Leek Olive Oil, Cascadian Wild Raspberry Balsamic, garlic, and Dijon mustard.
- Season the chicken breasts with salt and pepper, then place them in an oven-safe dish.
- Pour the oil and balsamic mixture over the chicken.
- Bake for 25-30 minutes or until the chicken is fully cooked, occasionally spooning the sauce over the chicken for a glaze effect.
- Garnish with fresh thyme and serve with a side of roasted vegetables.
