Leek Olive Oil and Raspberry Balsamic Glazed Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tbsp J. Olive Co. Leek Olive Oil
  • 3 tbsp J. Olive Co. Cascadian Wild Raspberry Balsamic
  • 2 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, whisk together the J. Olive Co. Leek Olive Oil, Cascadian Wild Raspberry Balsamic, garlic, and Dijon mustard.
  3. Season the chicken breasts with salt and pepper, then place them in an oven-safe dish.
  4. Pour the oil and balsamic mixture over the chicken.
  5. Bake for 25-30 minutes or until the chicken is fully cooked, occasionally spooning the sauce over the chicken for a glaze effect.
  6. Garnish with fresh thyme and serve with a side of roasted vegetables.
