Grilled Shrimp Skewers with Jalapeño Peach Glaze

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp J. Olive Co. Jalapeno Olive Oil
  • 1/4 cup J. Olive Co. Peach Balsamic
  • 1 tbsp honey
  • 1 garlic clove, minced
  • 1 tbsp fresh lime juice
  • Salt and pepper to taste
  • Skewers

Instructions:

  1. In a small bowl, whisk together J. Olive Co. Peach Balsamic, honey, minced garlic, lime juice, and a pinch of salt.
  2. Toss the shrimp in J. Olive Co. Jalapeno Olive Oil, salt, and pepper.
  3. Thread the shrimp onto skewers and grill over medium-high heat for 2-3 minutes on each side, or until pink and slightly charred.
  4. Brush the peach balsamic glaze over the shrimp during the last minute of grilling.
  5. Serve with extra glaze on the side for dipping.
