Garlic Olive Oil White Bean & Vegetable Soup
Ingredients

3 tbsp garlic olive oil, plus more for finishing

1 small yellow onion, diced

2 carrots, sliced

2 celery stalks, sliced

3 garlic cloves, minced

2 (15 oz) cans white beans, drained and rinsed

4 cups vegetable or chicken broth

1 tsp dried thyme or Italian seasoning

¾ tsp salt
-
½ tsp black pepper

1–2 tsp cucumber balsamic, per bowl
Instructions

Heat garlic olive oil in a large pot over medium heat.

Add onion, carrots, and celery. Sauté 5–7 minutes until softened.

Stir in garlic and cook for 30 seconds.

Add beans, broth, and seasonings. Bring to a simmer.

Simmer uncovered for 20–25 minutes.
