Garlic Olive Oil White Bean & Vegetable Soup

Ingredients

  • 3 tbsp garlic olive oil, plus more for finishing
  • 1 small yellow onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 2 (15 oz) cans white beans, drained and rinsed
  • 4 cups vegetable or chicken broth
  • 1 tsp dried thyme or Italian seasoning
  • ¾ tsp salt
  • ½ tsp black pepper
  • 1–2 tsp cucumber balsamic, per bowl

Instructions

  1. Heat garlic olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté 5–7 minutes until softened.
  3. Stir in garlic and cook for 30 seconds.
  4. Add beans, broth, and seasonings. Bring to a simmer.
  5. Simmer uncovered for 20–25 minutes.
  6. Finish each bowl with a drizzle of garlic olive oil and a small splash of cucumber balsamic before serving
