Garlic Olive Oil Pasta with Roasted Tomatoes & Cucumber Balsamic
Ingredients

¼ cup garlic olive oil, divided

12 oz pasta of choice

2 cups cherry tomatoes

¾ tsp salt

½ tsp black pepper
-
¼ tsp red pepper flakes (optional)

¼ cup fresh basil or parsley, chopped

¼ cup shaved parmesan or burrata (optional)

1–2 tbsp cucumber balsamic
Instructions

Preheat oven to 400°F. Toss cherry tomatoes with 2 tbsp garlic olive oil, salt, and pepper. Roast for 20–25 minutes until blistered.

Cook pasta according to package directions. Reserve ½ cup pasta water before draining.

Toss cooked pasta with roasted tomatoes, remaining garlic olive oil, and a splash of pasta water.

Finish with fresh herbs and drizzle with cucumber balsamic.
