Garlic Olive Oil Pasta with Roasted Tomatoes & Cucumber Balsamic

Ingredients

  • ¼ cup garlic olive oil, divided
  • 12 oz pasta of choice
  • 2 cups cherry tomatoes
  • ¾ tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • ¼ cup fresh basil or parsley, chopped
  • ¼ cup shaved parmesan or burrata (optional)
  • 1–2 tbsp cucumber balsamic

Instructions

  1. Preheat oven to 400°F. Toss cherry tomatoes with 2 tbsp garlic olive oil, salt, and pepper. Roast for 20–25 minutes until blistered.
  2. Cook pasta according to package directions. Reserve ½ cup pasta water before draining.
  3. Toss cooked pasta with roasted tomatoes, remaining garlic olive oil, and a splash of pasta water.
  4. Finish with fresh herbs and drizzle with cucumber balsamic.
  5. Top with parmesan or burrata if desired and serve warm.
