Chipotle Fig Beef & Sweet Potato Skillet

Ingredients:

  • 1 lb ground beef (or turkey)
  • 1 large sweet potato, peeled and diced
  • Small onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp J. Olive Co. Chipotle Olive Oil
  • 1½ tbsp J. Olive Co. Fig Balsamic
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Optional: fresh parsley for garnish

Instructions:

1.     Heat 1 tbsp Chipotle Olive Oil in a large skillet over medium heat.

2.     Add diced sweet potato and cook 8–10 minutes until tender, stirring occasionally. Remove and set aside.

3.     Add remaining olive oil, onion, and garlic to skillet; sauté 2–3 minutes.

4.     Add ground beef, seasoning with paprika, salt, and pepper. Cook until browned.

5.     Return sweet potatoes to the skillet. Drizzle with Fig Balsamic and stir until everything is coated and glossy.

6.     Simmer 2–3 minutes to let the flavors blend.

7.     Garnish with parsley before serving.
