Ingredients:
- 1 pork tenderloin (about 1–1.5 lbs)
- Salt and pepper, to taste
- 1½ tbsp J. Olive Basil Olive Oil
- 1 cup strawberries, chopped
- 2 tbsp J. Olive Strawberry Balsamic
- 1 tsp honey (optional, for sweetness)
- 1 clove garlic, minced
- Fresh basil for garnish
Instructions:
1. Preheat oven to 400°F.
2. Season pork tenderloin with salt and pepper.
3. In an oven-safe skillet, heat Basil Olive Oil over medium-high heat. Sear pork on all sides until browned, about 6–8 minutes total.
4. Transfer skillet to oven and roast for 15–20 minutes, until pork reaches an internal temp of 145°F.
5. Meanwhile, in a saucepan, combine strawberries, Strawberry Balsamic, honey, and garlic. Simmer on low for 5–7 minutes until thickened and jammy.
6. Let pork rest for 5 minutes before slicing. Spoon strawberry glaze over the top and garnish with fresh basil.
