Cucumber Balsamic Citrus Shortcake

Ingredients

  • 6 store-bought shortcake biscuits, pound cake slices, or angel food cake
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 2 cups oranges or grapefruit, segmented
  • 1–2 tbsp cucumber balsamic
  • Fresh mint (optional)

Instructions

  1. Whip heavy cream with powdered sugar and vanilla until soft peaks form.
  2. Toss citrus segments with cucumber balsamic and set aside for 5–10 minutes.
  3. Layer cake, whipped cream, and citrus.
  4. Finish with an additional light drizzle of cucumber balsamic.
  5. Garnish with mint or citrus zest if desired.

Optional Valentine’s Touch

  • Add sliced strawberries or raspberries for a pop of red
  • Cut cake into heart shapes or serve on a heart-shaped platter
