Blueberry & Rosemary Olive Oil Cake

Ingredients:

  • 1 ½ cups all-purpose flour
  • ¾ cup sugar
  • ½ cup J. Olive Co. Rosemary Olive Oil
  • 2 eggs
  • ½ cup milk
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries
  • 2 tbsp J. Olive Co. Wild Blueberry Balsamic

Instructions:

  1. Preheat oven to 350°F. Grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat sugar and eggs until light. Mix in Rosemary Olive Oil, milk, and vanilla.
  4. Gradually add dry ingredients, then fold in blueberries.
  5. Pour batter into loaf pan and bake for 40–45 minutes.
  6. Let cool, then drizzle with Wild Blueberry Balsamic before serving.
