Ingredients
- 2 Tbsp J. Olive Co Blackberry Ginger Balsamic
- 1 stick butter (1/2 cup)
- 11/4 cup granulated sugar, divided, plus 1 tsp. for sprinkling (optional)
- 1 cup self-rising flour
- 1 cup milk
- 2 cup blackberries (frozen or fresh)
Instructions:
- Melt butter in a microwavable dish. Pour 1 cup of sugar and flour into a mixing bowl, whisking in milk. Mix well. Then, pour in melted butter and whisk it all together.
- Make a simple balsamic glaze by heating up 2 Tbsp of blackberry ginger balsamic. Heat on low for just a minute until it starts to thicken. Toss with fresh or frozen blackberries so that they are lightly coated.
- Pour batter into a buttered baking dish. Rinse and pat dry the blackberries.
- Sprinkle blackberries over the top of the batter; distributing evenly. Sprinkle 1/4 cup sugar over the top.
- Bake in the oven at 350˚ for 1 hour, or until golden and bubbly.
- For a crispy cobbler, sprinkle another teaspoon of sugar over the cobbler around 10 minutes before it’s done.
