Pomegranate Balsamic Cherry Compote over Goat Cheese

Ingredients:

·       1 cup fresh or frozen cherries, pitted and halved

·       2 Tbsp J. Olive Co. Pomegranate Balsamic (a little extra for drizzle)

·       1–2 tsp J. Olive Co. Extra Virgin Olive Oil

·       1 tbsp honey

·       1/4 tsp salt

·       1 log goat cheese (you can also use a block of cream cheese or brie)

·       Optional: A pinch of cracked black pepper or fresh thyme

·       Crackers or crostini for serving

Instructions:

1.     In a small saucepan, combine cherries, 2 Tbsp of pomegranate balsamic, honey, and salt.

2.     Simmer over medium heat for 8–10 minutes until the mixture is thickened and syrupy. Let cool slightly.

3.     Place the goat cheese on a serving dish. Spoon the cherry compote over the top.

4.     Whisk together equal parts of EVOO and balsamic to make a drizzle. For extra flavor, you can add a pinch of cracked black pepper and dried or fresh thyme leaves.

5.     Serve with crackers or toasted baguette slices.
