Peach and Jalapeño Salsa

Ingredients
  • 2 to 3 ripe peachespitted and diced
  • ½ red bell pepperdiced
  • ¼ cup diced red onion
  • ¼ cup chopped fresh cilantro
  • Juice and zest of 1 lime
  • 2 Tbsp J. Olive Co. Jalapeño Olive Oil
  • 3 Tbsp J. Olive Co. Peach Balsamic
  • small garlic cloves, grated
  • ½ jalapeño pepperminced
  • ¼ teaspoon sea salt 

Instructions

  1. In a medium bowl, mix together the peaches, bell pepper, onion, cilantro, lime juice and zest, jalapeño, and salt. 
  2. Whisk grated garlic, olive oil and balsamic to make a dressing. Drizzle over salsa mixture to taste preference and chill until ready to eat. Leftover dressing may also be refrigerated.
