• 1/3 cup J. Olive Co. Sicilian Lemon balsamic
  • 2 tsp fresh rosemary, chopped
  • 2 cloves garlic, chopped
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
  • 12 lamb rib chops
  • 3 Tbsp J. Olive Co. Spicy Calabrian Pesto Olive Oil


  1. Place marinade ingredients in a glass bowl. Submerge lamb chops in the marinade. Place in refrigerator and allow to marinate for at least 2 hours or over night.
  2. Preheat grill. Cook lamb chops on hot grill 3 minutes per side. Lamb chops are delicious served rare to medium rare, so do not overcook. Serve and enjoy.
