Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp freshly ground black pepper
  • 1/8 tsp ground nutmeg
  • 2 beaten eggs
  • 1 1/2 cups mashed ripe bananas
  • 1 cup sugar
  • 1/2 cup J. Olive Co. Madagascar Black Pepper Olive Oil
  • 1/4 cup chopped walnuts

Directions

  1. Grease bottom and sides of 9x5x3-inch loaf pan; set aside. Combine flour, baking powder, soda, and spices; set aside.

  2. In medium bowl or mixing bowl combine eggs, bananas, sugar and oil until smooth. Add egg mixture all at once to flour mixture. Hand stir until moistened. (batter should be lumpy). Fold in walnuts and spoon batter into prepared loaf pan.

  3. Bake in 350ºF oven for 55-60 minutes or until a wooden toothpick inserted near center comes out clean. If needed, cover lightly with foil during last 15 – 20 minutes to prevent over browning.

  4. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely then wrap tightly with foil or plastic wrap to store overnight before slicing.
